This Austin inspired breakfast taco is full of protein, healthy fats and fiber for a balanced beginning of its day.

4 corn tortillas

4 big eggs
- Kosher Salt and newly ground black pepper

4 crispy bacon slices, chopped

1 mature avocado, crushed

2 tablespoons of finely chopped raw onion

Handful of fresh coriander leaves

1/4 cup of smoked tomato sauce (bought in the store or homemade)
- In a small bowl, break the eggs and gown with a tablespoon of water (or milk if you wish), pinch of kosher salt and newly terrestrial black pepper. Heat a pan over medium-low heat with enough butter or oil to slightly cover the bottom of the pan.
- Add the eggs to the pan and cook, stirring with a spatula, until it squeezes to your liking. Remove from heat.
- Heat the corn tortillas in a dry pan or directly on a gas flame until they are soft and slightly hunted.
- To assemble, the avocado broke on each tortilla.
- Cover with scrambled eggs, chopped bacon, raw onion, coriander and a generous tomato sauce with tablespoon or smoked. Serve warm and enjoy!
